Method:

  1. Wash, destem and slice chillies into rings. Jalapenos work well for this recipe but you can use whichever chillies you have to hand.
  2. Add sugar, vinegar and powders to a pan, heat and sir until all of the sugar is dissolved.
  3. Bring to the boil and keep boiling for 5 minutes.
  4. Add the chillies and stir them in.
  5. Bring back to the boil, stirring occassionally.
  6. After around 4 minutes the peppers will begin to look a bit darker as they start to cook.
  7. Strain the chillies from the liquor, return the liquor to the pan and bring back to a vigourous boil for around 5 minutes.
  8. Stuff the chillies into jars then pour the sweet brine over the top. Fill the jars up to the top, agitate the chillies to get any air bubbles out.
  9. Seal the jars and wait patiently for the flavours to develop (if you can.)
  10. Don't throw any unused sugar brine away, this will make an excellent base for a BBQ sauce.

1kg Langholm grown chillies

0.5kg sugar

250ml apple cider vinegar

1tsp kasmiri chilli powder

1tsp turmeric

1tsp ground ginger
